Low Carb Pancakes For One | Banana Chocolate Chip

I’m not at all against carbs, I love carbs and eat a lot of them! But I do like to experiment with cooking and see what adjustments I can make in case I am looking to eat less carbs or just save them up for a different meal.

Here are some lower carb  pancakes for one that you can make for breakfast or any other meal, let’s be real breakfast foods are always a good idea. I would say healthy, but I loaded these with chocolate chips – you could always add something else instead like blueberries.

These are super easy and quick, I will mention however that these are not your typical pancake texture. They have a more eggy omelette type texture, but I enjoy it because it still satisfies my taste for pancakes without the large load of carbohydrates.

All you will need is some baking powder, flour (choose your preferred type), 2 eggs, and one ripe banana.

I mashed my banana with a fork, added my two eggs, baking powder, and flour and just whisked it all together.

I poured the batter into my medium-high heat non stick fry pan (with oil in it), and sprinkled on my mini chocolate chips. After about a minute I checked to see how dark the bottom was and flipped it if I was happy with the colour. They are a little less easy to flip than normal pancakes as the batter is more runny and mostly egg and banana.

The recipe makes 4 good sized pancakes, I personally like to top mine with a drizzle of melted peanut butter.

Easter Eggs | An Easy Decorating Method

It is a tradition in my house to make Easter eggs every year! I have always loved any sort of arts and crafts, so this has always been something I look forward to doing. We used to buy the kits that come with the dye tablets and plastic wraps that you shrink on with boiling water. Those are awesome, but we have come up with a fun method that uses materials we always have on hand! All it takes is some regular crayons, food colouring, and vinegar.

So before any of the decorating can commence you need to hard boil your eggs. I made 14 eggs just in case some of them cracked during the boiling process (which two did). I added my eggs to a pot, covered with water, and brought them to a boil. Once boiling I lowered the temperature to medium-low and timed out 12 minutes. Once they were done, I placed them in a bowl of ice water.

Next I boiled a kettle of water, and decided I would be making 3 different colours of eggs. I chose hot pink, bright blue, and yellow. I used regular food colouring and the instructions that they recommend on the package with some adjustments.

For the yellow I used one mug about 2/3rds the way full with boiling water, I added 1.5 tsp of regular white vinegar, and 35 drops of yellow dye.

For the hot pink I used the Neon pack of dye, same amount of water, same amount of vinegar, 10 drops of neon pink, and 3 drops of neon purple.

For the bright blue I used the Neon pack of dye, same amount of water, same amount of vinegar, 9 drops of neon blue, and 3 drops of neon green.

You can really make any colour you want and play around with the dye mixtures. I suggest sticking to around 10 drops of darker dyes, mixed with 3 drops of a lighter/brighter colour (ex. blue + yellow, red + yellow, green + yellow). Or perhaps just 15 drops of a dark colour alone, and then 25-35 drops of a light colour alone.

Next you take the egg you are ready to decorate out of the ice water and dry it off with a towel. Then you take some crayons and draw on the designs that you would like. The wax of the crayons prevents the dye from dyeing that area of the egg and your drawing really stands out. I find what works best is using crayon colours that are very different from the dye you are going to use. So for my yellow eggs I used darker crayons, and for my pink and blue eggs I tried to stick with the neon crayons (which always work quite nicely on darker dyes).

When you are done drawing, you drop your egg into your mug of dye, and let it sit for a few minutes. Doesn’t really matter if you leave it for too long, I usually just check on it and take it out when I am ready to put the next one in.

When you take the egg out of the dye, you just need to dab it off with a paper towel and let it sit to dry. I put on a rubber glove to pick them out of the dye since is pretty staining to your fingers – I have learned from previous years 😉 I sat my eggs on an ice cube tray to dry. In previous years I have just placed them back in their egg carton to later place in the fridge.

And that’s all it takes to make some beautiful easter eggs! This is a super kid friendly method and is so fun to do! You can even make each family member one by drawing each person’s name on!

Recipe | Easy Chewy Cocoa Brownies

Now I know one of the main focuses of my blog is fitness, and chewy cocoa brownies doesn’t really seem to compliment that category too well (…sighhh), but I like chocolate just as much as the next girl and sometimes you’ve just got to treat yourself! But seriously it’s all really just about balance, I certainly don’t deprive myself of sweets – that’s a sin…

So here I have for you a super EASY brownie recipe! I whipped up this batter in a couple of minutes and the clean up was minimal. The reason why it is particularly easy is because there is no melting of chocolate necessary, these are made with cocoa powder alone – and boy are they rich and chocolatey!

SAMSUNG CSC So to start I just gathered up all of my ingredients to make the whole process quicker, and I also started preheating my oven (350°F). Though I usually use margarine for this recipe, I tried butter this time since my margarine was running low. There were some differences that I noticed, but I can’t be certain they were due to the butter or my addition of a splash of milk (which I will mention later). I found that they were a little more fudgey and chewy this time, they are usually more cakey. Both are fantastic in my opinion, so you can choose what you would like to use based on your preferences. Maybe I should make two different batches next time to “test” the difference, twice the brownies all in the name of research! 😉

All you really need is one mixing bowl and a 9-inch square baking dish. I greased my baking dish with some margarine I used a sifter for my flour and cocoa because I have one, i’m unsure if it really makes a huge difference.

I stirred all of my dry ingredients together in my mixing bowl and then melted my butter in a small bowl. Im lazy so I just popped it in the microwave for about 25 seconds and then stirred it to melt the small chunk that was still in there. I didn’t want to heat it up too hot since I was going to be adding eggs into the batter (the hot butter ends up cooking the egg whites a bit, and you are left with egg white chunks in your batter).

The non-lazy way to do it is to melt your butter in a pot on the stove, that way your can melt/dissolve your sugar into it. In the past I have only ever used margarine to make this recipe, and I have found that when I am lazy and don’t melt the sugar too – the brownies turn out quite grainy. But for some reason this time they weren’t, even though I didn’t melt the sugar…….I’m unsure how butter would change that, but it seems it did.

Before I poured the melted butter into my dry ingredients, I added the vanilla into the butter. Then I combined this with my dry ingredients, and also added in my two eggs. I found that after I mixed all of this together it was still a tad too dry to combine fully, so I splashed some milk in there and it was much better. Im talking a very small amount, try a teaspoon at a time to prevent adding too much if your need to.

Once everything was smooth and fully combined, I poured the batter into my greased baking dish. I think this picture demonstrates the consistency quite well, it is pretty thick!

I shook the baking dish a bit to encourage the thick batter to spread out evenly. And then I popped it in to my preheated oven (350°F).

After 25 minutes I was left with this glorious dish of goodness! You can take a toothpick and poke the centre to see if it comes out clean. If it is goopy you can pop them back in the oven for a couple minutes.
